The Lazy Gal Salad Recipe
Fresh Flavor in Every Crunch!
When summer rolls around, I’ll be honest, I can get a little uninspired (and dare I say, lazy) in the kitchen. But this dish? It’s the perfect solution. Incredibly fresh, light and packed with flavour. It pairs with almost anything, but trust me, it’s especially amazing alongside whatever you're grilling. Chicken? Perfect. Corn on the cob? Perfect. Veggie kebabs? Amazing.
With just a few ingredients in both the salad and the dressing, it’s so quick to whip up - even when you’re feeling lazy.

serves 4
INGREDIENTS
- 2 heads romaine, chopped
- 1 long English cucumber, chopped
- 4 green onions, chopped
- 1 handful of fresh dill (or whatever herb you have on hand)
- 1/3 cup feta cheese
- Optional – whatever else is in the fridge and needs to be eaten!
DRESSING
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- Salt
- Black pepper

DIRECTIONS
- Chop or tear lettuce into bite-size pieces, finely chop the green onions and dill, crumble feta, and add all of the ingredients to a bowl.
- Make the dressing by adding all of the ingredients to a separate bowl and whisking them together.
- Pour some of the dressing over your greens (taste to see if it is dressed to your liking), mix, and enjoy!
