WHAT YOU'LL NEED
- 1 tbsp coconut oil
- 1 onion, diced
- 5 cloves garlic, crushed
- 1 pack cremini mushrooms, sliced
- 1-2 carrots (I like a mix of yellow and orange)

2 stalks celery
- 1/2 tsp turmeric
- 1 tbsp tamari
- 1/4 tsp chilli flakes
- 1 litre veggie broth
- 1 cup of water
- 2 cups bok choy or spinach
- Handful of parsley
- Salt and pepper to taste
- Squeeze of lemon or lime juice
HOW TO
In a large pot, heat the oil over medium heat. Add the onion and sauté until soft and translucent, then add the garlic, mushrooms, carrots, celery and stir to combine. Season with salt and pepper. Let cook for 5-8 mins
Stir in the turmeric, tamari, chilli flakes and sauté for 1 to 2 minutes.
Add the broth and water and stir to combine. Bring the mixture to a boil and then reduce the heat to medium-low and simmer until the vegetables are almost tender, for the last 5 mins add the bok choy or spinach.
Just before serving add some fresh parsley and the lemon. Taste, then add more salt and pepper if needed.
