I am gonna cut to the chase right out of the gate. Actual Nutella was used in the testing of this recipe. And no, I don’t feel guilty about it! My kids lost their marbles when I brought home what was left in the jar, and a few staff got to try it for the first time.
My staff actually thought I was bonkers for bringing Nutella into our healthy AF kitchen . . . but when it comes to recipe testing, it can get expensive, so I didn’t want to use the clean, all natural (and much more expensive) brand until I nailed the recipe. Nutella is iconic for a reason - it’s that good! So you won’t get any judgment from this health junkie if you want to give it a try!
I had set aside an entire day to recipe test collagen protein bar recipes. I had 6 totally different recipes planned out to try, and this is the first one I tried. It came out so good, it was like - BOOM! ONE AND DONE!

INGREDIENTS
- ½ cup chocolate hazelnut spread (store-bought or make your own)
- 4.5 Tbsp Good Life Collagen
- 1 Tbsp coconut oil (softened or melted)
- ½ tsp vanilla
- Pinch of sea salt
- Sprinkle of cinnamon (optional)
- 1 Tbsp coconut flakes (optional)
- ½ Tbsp maple syrup or honey (optional)

RECIPE
- Combine the collagen, chocolate hazelnut spread, coconut oil, vanilla, and salt in a large bowl. Mix until smooth and creamy, either by hand or with a mixer.
- Taste test! YUM. Try not to eat too much! Consider adding any of the optional mix-ins above—everyone has different preferences, so follow yours.
- If you like it sweeter, add ½–1 Tbsp maple syrup and mix again. This will make the batter thicker and slightly clumpier.
- Love coconut? Mix in the flakes or save them to sprinkle on top—it’ll give Ferrero Rocher vibes!
- Spread the mixture onto a parchment-lined baking pan or shallow dish. Flatten with your hands or the back of a spoon.
- Score lines with a knife where you’d like to cut the squares later.
- Freeze for 20–30 minutes, then cut into squares. Store in the fridge or freezer.
