Grilled Peach + Goat Cheese Salad
Summer was made for meals like this!
Juicy grilled peaches, creamy goat cheese, fresh blueberries and crunchy toasted walnuts come together in a salad that's equal parts nourishing and impressive. It feels a little fancy, but comes together with minimal effort - leaving more time for sunshine, friends and being outside.

WHAT YOU’LL NEED:
serves 2
- 5 cups of arugula
- 1/3 cup blueberries
- 1/2 cup goat cheese (or feta)
- 1/2 cup walnuts
- 2 grilled peaches drizzled with a little honey (optional)
- Honey for drizzle (optional)
Dressing:
- 1/2 cup EVOO
- 2 tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 1 tbsp honey
- 1 small clove of garlic
- Crack of pepper
- Pinch of salt

HOW TO:
- Heat up that BBQ!
- Halve and pit the peaches
- Brush each cut side with olive oil
- Grill, cut-side down, over medium heat for 4–5 mins
- Flip the peaches and cook until tender, 4–5 mins, then drizzle with honey
- Add all the dressing ingredients to a bowl or mason jar and combine
- Dress your salad & enjoy!
