Boozy Popsicle Recipe
with Grapefruit, Lychee, Strawberry, Basil + Gin
You know what’s better than a popsicle on summer day? One that will bring you that light boozy buzz with your pals! Time to put some Snoop Dog on the stereo, mix up a little gin + juice, and have some fun!
The flavour inspo came from a cocktail Cactus Club used to make called the Faulty Tower - a mix of lychee, grapefruit, basil and booze. Pretty much a Lady Luxe cocktail with lychees - YUM!
i wanted some colour dimension and extra hint of summer sweetness so made a quick strawberry jam.
The result - DELICIOUSNESS!!

WHAT YOU WILL NEED:
yields 6
- 1 cup Good Life’s Lady Luxe (sub in grapefruit juice and a few basil leaves)
- 1 cup canned lychees and their juice (but totals 1 cup)
- 1/8 cup Sheringham Gin
Strawberry Quick Jam (optional)
- 1 Cup Strawberries
- 1 Tbsp water
- 1 Tbsp honey

HOW TO:
- Make your strawberry jam by heating the chopped strawberries in a saucepan along with the water and honey. Mix, mash, and stir until it thickens, then place in the fridge to cool. Can’t be bothered? Just add a few strawberries to the blended mixture below!
- Add the Lady Luxe, gin, and lychees to your blender and mix.
- Add a dollop of the jam to your popsicle mold then fill up with your boozy slushy mixture.
- Freeze about 4 hours or until frozen.
Best enjoyed in the sunshine with humans you love!
I took the remaining ingredients and blended them up with some extra gin the plopped my popsicle in the glass . . . twas a tad tipsy!!! XO, Andrea
