GUT-LOVING + ULTRA NOURISHING
Warm, earthy and deeply nourishing, this mushroom-based broth is comfort in a cup. Think of it as a plant-based alternative to traditional bone broth, packed with savoury flavour and ingredients that help nourish your body from the inside out.
I first discovered a version of this broth while living in Beijing, where a Chinese friend and herbalist would make me a seasonal broth + juice cleanse each winter. It was the first time experiencing that feeling of knowing that something you are drinking is nourishing your body on a deep cellular level.
The secret to its rich, earthy flavour? Mushrooms 3 ways! Dried, fresh, and reishi powder. Used for centuries in Traditional Chinese Medicine, mushrooms like reishi are celebrated for their unique compounds and potential immune-supporting benefits.
Sip it straight from your favourite mug or use it as a nourishing base for soups and other recipes.
Simple, comforting and made to FEEL GOOD.
INGREDIENTS
- 3L water (about 12 cups)
- 3 TBSP coconut oil
- 1 onion
- 1 head of garlic, smashed
- 1 big knob of ginger, chopped
- 1 little knob fresh turmeric root, chopped
- 2 cups of spinach or kale
- 3 cups of chopped vegetables (anything! Sweet potato or carrot is great, plus some kale and celery is what we use
- 10 shitake mushrooms
- 1 cup dried mushrooms of choice
- Salt and pepper
- pinch or more of cayenne, depending on spice love.
- 1 tsp of reishi powder
- 1 TBSP Braggs Liquid Aminos or Tamari
- ½ bunch of fresh herbs of choice: parsley, cilantro
- 1/3 cup of nutritional yeast
DIRECTIONS
Get a nice big pot and heat up the oil.
Add the onion, garlic, ginger, turmeric root and sauté for 5 minutes.
Add your veggies, fresh mushroom, dried mushrooms, reishi, salt and pepper into the pot and saute for another 5-10 minutes just until every starts to soften.
Fill the pot with as much water as you can fit – hopefully about 12 cups.
Bring to a boil.
Let it simmer with the lid on for an hour or so until everything has a chance to cook down.
Strain out the veggies.
Stir in the nutritional yeast, braggs/tamari, and fresh herbs.
HELPFUL TIP
Once cooled freeze half – we recommend freezing individual serving sizes to make it easy to grab one when you want it. Ziplocks work amazing – layed out flat as they take up way less freezer space.
