with protein on every layer!
A classic combo with the added benefit of protein & incredibly effective Good Life Collagen.
I love PB + J! I’ll take it on a rice cracker, on some toast, and in a smoothie with strawberries representing the jam. It’s such a satisfying and delicious combo, so we thought it would be fun to turn it into a satisfying and healthy snack!
Collagen works to repair tissue and elasticity, while increasing the moisture in your skin. It noticeably reduces fine lines and wrinkles, while helping your hair grow faster and healthier.
As I have been back in the gym and lifting heavy, I’m being more mindful of hitting my protein goals. Having a sweet treat that also contains protein makes it really easy to hit my goals for the day.
Protein plays a crucial role in muscle development as it acts as the main component of muscle tissue, supplying the amino acids needed to mend and reconstruct muscle fibers that become damaged during workouts, resulting in enhanced muscle growth.
Protein also helps you keep full longer and control your appetite!
INGREDIENTS
CRUST
3/4 cup cashews
1/2 cup oats
1/3 cup vanilla protein powder
4 medjool dates
1/4 cup coconut oil
MIDDLE LAYER
3/4 cup peanut butter
1/4 cup maple syrup
1 tbsp melted coconut oil
1 tsp vanilla
1 Tbsp Good Life Collagen
Few dashes of sea salt
TOP LAYER
2 cups frozen berries (we used mix, but any will do)
1/4 cup Good Life fresh squeeze OJ (sub store bought)
1 tbsp chia seeds
1 Tbsp Good Life Collagen or protein powder
2 tsp corn starch
DIRECTIONS
START WITH THE CRUST - Line a baking pan/tray with parchment paper. 8 X 8 works well. Add everything to your food processor. Blend until even, then keep going until it starts to form together a bit. Press the crust evenly into the pan and pop in the fridge.
MIDDLE LAYER - Add everything to a pot (no heat) and mix until smooth, then turn the heat onto medium heat and bring to a gentle simmer for 2-3 minutes. Remove from heat and allow to cool in the fridge.
TOP LAYER - Grab a small pot and add the berries, bring to a gentle bowl on medium heat for a few minutes. Use a wooden spoon to break up the berries and stir constantly. Add the chia seeds and Good Life Collagen and cook for a few minutes. Finally add your corn starch and cook another minute or so until the berries thicken. Take it off the heat and allow to cool all the way.
ASSEMBLE - Ensure all layers are cool, then spread on middle layer and top with the jelly layer. Pop back into the fridge to harden before cutting.I like to pre-cut my bars and store them in an air tight container with parchment between the layers.
