Trending: Jennifer Aniston Salad

Apparently Jen had this salad everyday while on the set of Friends! We totally understand why - it’s delicious! It’s easy to make, fresh and packed with flavour, and it’s been trending thanks to @modernnonna via Instagram.

But the real reason I think it is trending is not the flavour, it’s cause it’s got us all wondering . . .Could we actually eat the same thing every day for 10 years? Even if it is delicious?

INGREDIENTS:

3 cups of cooked bulgar (I subbed farro - 1 cup uncooked should yield you what you need)⁠
1 cucumber chopped or sliced ⁠
1/2 cup of parsley, chopped⁠
1/2 cup mint, chopped⁠
1/3 cup red onion, sliced thinly or diced⁠
1/2 cup chopped pistachios⁠

1/2 cup drained + rinsed chickpeas
Juice of 1 lemon⁠
1/4 cup extra virgin olive oil⁠
salt + pepper⁠
1/2 cup feta⁠

DIRECTIONS:

Combine everything and enjoy!
