CHOCOLATE HAZELNUT TRUFFLES

Good Life’s Recipe!

The inspiration for this dessert came from a combined love of Nutella, Ferraro Roche and a desire to make healthier versions. After trying a few different nut butters and a high quality hazelnut extract, we found cashew butter gave us the creamy texture of a truffle and the flavouring made our Nutella dreams come true!

We also wanted to include our Good Life Collagen for it’s protein and skin nourishing benefits. It’s such an easy way to give this decadent dessert a healthy + beauty boost!

Creamy cashew butter infused with hazelnut, blended with raw cacao, maple syrup and Good Life Collagen, then rolled in chopped almonds, coconut and a hint of salt.

These are by far our best selling dessert and most popular dessert among kids.

INGREDIENTS

  • 1/2 cup cashew butter ** (see note about using hazelnut butter instead)

  • 3.5 TBSP maple syrup

  • 2 TBSP cacao

  • 2 TBSP Good Life Collagen

  • 1/8 tsp salt

  • 1/4 tsp hazelnut extract

  • 1/8 tsp vanilla extract

  • 2 TBSP dried Coconut

  • 2 TBSP chopped cashews or almonds to roll on the outside

DIRECTIONS

Add wet ingredients to a large bowl and mix. Once everything is together; add collagen, salt and cacao to wet mixture. Knead or mix until smooth and the mixture is no longer sticking to the bowl. Roll dough into tablespoon sized balls and cool in fridge for about 15 minutes. Remove from fridge and roll balls in coconut and cashews/almonds to coat the outside. Store in fridge or freezer.

**Full transparency - the reason we went cashew butter and hazelnut extract is because the cost of organic hazelnuts or hazelnut butter was not a cost effective for us. But for a home chef, you could totally use hazelnut butter instead if you like and skip the hazelnut extract.
