Start your day FEELING GOOD!

Is breakfast the most important meal of the day? Not really . . . why should breakfast get all the glory?! But it sure can set the tone of how you feel first thing in the morning. And how you feel, varies day to day, and season to season, so having a few go-to’s on hand can help set you up for success.

We all deserve to feel AH-Mazing, so what better way to lean in to those vibes than starting the day in a nutritious kinda way.

Whether you are joining us for a 21 Day Detox, prepping for a healthy reboot, or just craving something new, we’ve put together 4 breakfast recipes to motivate you towards feeling good.

EGGS ON CORN CAKES

with a side of greens

My family loves to enjoy eggs for breakfast a few days a week. We trade a local farmer eggs for our juice pulp, and they are delicious! I recently taught my boys how to cook them sunny side up and it was a GAME CHANGER! They are so quick and easy to make. If my 8 year old can pull off this breakfast on a school day, I know you can too!

My kids keep their side of greens to baby spinach, and opt for sour dough bread, and a glass of our Glo juice. Whereas I go for gluten free corn cakes, any kind of greens, and our Detox Greens. Even if you give your kids 3 little leaves of spinach on their plate, the habit of opening their eyes to the concept of veggies with breakfast is a huge WIN!

INGREDIENTS

  • 2 Corn Cakes (they are like thin rice cakes) or the bread of your choosing.

  • 2 Eggs, sunny side up (or however you like them)

  • Handful of mixed greens

  • Detox Greens

  • Optional Toppings- Hot Sauce or Kimchi for extra flavour, and/or avocado

  • Salt + Pepper

DIRECTIONS

  • Cook your eggs however you like and put on top of your corn cakes.

  • Toss some greens on your plate and sprinkle salt and pepper over everything.

  • Consider adding some spice for extra flavour.

  • Crack open your cold pressed juice (with 2-3 pounds of fresh fruits + veggies pressed into each bottle) and enjoy!

GINGER COLADA SMOOTHIE

Makes 1 smoothie

Smoothies are such and easy and effective way to ingest a lot of nutrients. They keep you hydrated, full, and provide sustainable energy as you conquer your day. I tend to drink way more smoothies in the warmer months than the winter, but still rely on a good smoothie at least twice a week for breakfast.

INGREDIENTS

  • 2 tbsp coconut milk from a can (*see note below)

  • 2 cups spinach

  • 1 tbsp fresh lime juice (*see note below)

  • Tiny nib of fresh ginger (1/2 tsp)

  • 1/3 frozen banana

  • 3 chunks pineapple

  • 1.5 cups almond milk or nut milk of your choice

  • 1 tbsp hemp hearts, optional

  • 1 scoop plain or vanilla protein powder and/or 1 tbsp of Good Life Collagen

** I love to make frozen cubes of coconut milk, fresh lime, lemon, orange juice and yogurt. Using an ice cube tray I will freeze each of these items, then pop out the cubes and toss them all in a large container I keep in the freezer. When it comes to smoothie making time, I have all these gorgeous ingredients on hand, portioned out and ready to go. Smoothie game changer!

If you ever have spinach about to go bad you don’t want to waste, try blending it with a little water, and doing the ice cube trick as well. You’ll have greens for your smoothie even when you are outta greens!

DIRECTIONS

  • Add everything to your blender and blend! Enjoy your smoothie and have a fabulous day. :)

OATMEAL

with fruit + nut butter

On a cold winter morning, a bowl of oatmeal can really hit the spot. The key is adding healthy fats like peanut butter - this will keep you full WAY LONGER than if you skip it. On juice days at the kitchen, I start around 5:30AM so my body isn’t quite ready for breakfast. I look forward to taking my break and making oatmeal all morning!

I keep a box of Q’ia instant oatmeal in the coconut flavour in my desk. My morning break always coincides with when Nicollette is making Mylk Chocolate so I got in the habit of just putting my bowl under the pour spout and adding a splash to my oats. . . it ‘s so seriously good, that now I am officially obsessed and can’t go with out it in my oatmeal!

INGREDIENTS

  • Qia instant oats (or whatever oatmeal you like)

  • 2 Tbsp peanut butter or almond butter

  • 1/4 cup chopped apple

  • Optional, few berries

  • Optional, 1 Tbsp hemp seeds

  • Optional, big splash of Mylk Chocolate

DIRECTIONS

  • Cook your oats according to the directions.

  • Add all of your toppings, including the mylk chocolate and then pop in the microwave for 30 seconds.

I find that once I add all my cold toppings it’s no longer a warm breakfast, and that was the point of going with oatmeal in the first place! Then result is a delicious messy bowl of goodness - not what I post on instagram! YUM!

AVOCADO TOAST

with a mug of Medicinal Mushroom Broth

Avocado toast (on real toast!) is definitely one of my all time favourite meals for lunch, dinner or a snack. Whoever came up with this dish and started sharing it for the world to discover deserves a Noble Peace Price for all the joy it has brought humans like me! I especially love it with a runny poached egg and some sprouts on top. Add a side of our Medicinal Mushroom Broth, and I almost can’t take it . . .(I get really excited about good food!!!) So nourishing, so comforting and so damn delicious!!

INGREDIENTS

  • 1 Slice of your favourite bread

  • 1/2 an avocado

  • Earth Balance vegan butter

  • Handful of sprouts

  • Salt + Pepper

  • 1 cup of Medicinal Mushroom Broth

  • Optional, chilli flakes

  • Optional, sprouts

  • Optional, poached egg (not pictured)

DIRECTIONS

  • Gently warm a cup of Medicinal Mushroom Broth on the stove and then pour into your favourite mug.

  • Toast your bread and spread on some butter.

  • Scoop out avocado from the peal and gently smash it around on your bread.

  • Top with a generous dash of salt and pepper - and the toppings you love.

  • Sit down and take moment to feel gratitude for the beautiful food you are about to consume. Then savor every bite!
