Pinecone Truffle Recipe
VEGAN PINECONE TRUFFLES
a festive, 4 ingredient holiday dessert - that’s almost too cute to eat!
These holiday desserts are easy and fun to make - especially if you have little ones who like to get involved in the kitchen. The fact that they look like art on a plate also makes them a wonderful dessert for a party or to gift to friends or loved ones.
With only a few ingredients and a food processor or blender, the truffle base comes together in minutes. I used slivered almonds but I have seen it done with cornflakes. The centre is a chocolate-y, truffle-y delight - paired with the crunch of the almonds and the chocolate coating makes for such a delicious dessert!
INGREDIENTS
200g of chocolate biscuits or cookies. I used Bourbon Biscuits but Oreos would work great as well.
75g vegan cream cheese
1 Tbsp raw cacao
250g dark chocolate (we make ours in house, but 1.5-2 cups of semi sweet choc chips will do great!)
1 tbsp coconut oil
Pinch of salt
Slivered or sliced almonds (could sub con flakes)
Powdered sugar for dusting
DIRECTIONS
Add the cookies to a food processor and blend until smooth then pour into a bowl. Add the cream cheese and cacao and evenly mix. Roll into balls then create cone shapes and place on parchment lined tray. Put in freezer for 15-30 minutes to harden up a bit and make them easier to handle - if they need a little more re-shaping after that, it’s easy.
Add your almonds, starting at the base and working your way up.
Melt chocolate and coconut oil together with a double broiler or the microwave. Placing your pinecone on a fork, use a spoon to scoop and pour melted chocolate all over it to completely cover it. Place it back on the parchment and dust with powdered sugar! Pop back into the freezer until chocolate fully hardens, then store in an air tight container in the fridge. I like to take mine out for 10 minutes before I eat it to let it warm up a bit!
