Sunday Prep - The Easiest Homemade Blueberry Muffins Ever!!!

Let's face it. Winter isn't over just yet. Please don't get us wrong... We definitely wish it was!
We're counting the days until the lovely plants in our juice kitchen begin to sprout and bloom. In the meantime, we're focused on making these cold and windy mornings that much more calming and wholesome.
Muffins are easy - especially the kind of recipes that require only one mixing bowl and just a few ingredients. Less dishes means everyone is happier!!!
Not to mention, they're grab and go. The busier we become, the more we like having healthy on-the-go options we can eat with one hand. Just being real!!!!

This recipe was an easy first choice because it contains The Blend - a new adaptogenic superfood mix we recently launched in our online shop. These muffins are as easy as it gets. Filled with ample protein, they make a great breakfast or late day snack when you're feeling sluggish. They contain powerful antioxidants in the form of dark chocolate and blueberries - you can throw both ingredients in together for a fun flavour party or choose one. We love fruit and chocolate together, so we tend to choose the pairing.
From there, vanilla adds just touch of sweetness. If you're opting for low sugar, just leave out the chocolate and you'll be good to go! This recipe is void of refined white sugar.
You'll need very little in the form of tools for this recipe.
It's the fastest muffin recipe we've ever made! Just one bowl, some utensils and your oven preheated to 350 degrees. Enjoy!!!
INGREDIENTS
2 Bananas
1 Egg
1/4 Cup Spelt Flour
1 TBSP Vanilla
1 TSP Baking Soda
Dash Of Salt
Blueberries (Optional)
1/4 Peanut Butter
1/4 Peanut Butter Powder
Chocolate Chips (Optional)
The Blend (Optional)
DIRECTIONS
Mix two ripe bananas together in a large bowl - mashing them until soft. We use like to use a fork for this process and it works perfectly fine. Again, the less dishes - the better!!!
From there, ad the flower, vanilla, peanut butter and peanut butter powder and mix these ingredients together until the batter is smooth and slightly sticky. Next, ad one egg and beat into the batter until thoroughly mixed.
If you have The Blend - or any adaptogens for that matter - toss them in for an extra-healthy kick!
Throw in 1 TSP of baking soda and a touch of salt. From there, you can add the blueberries and chocolate chips, or divide the batter into two bowls so you can enjoy two flavours. At this point in the recipe, you could ad whatever fruit you desire.
It's totally up to you!!!
This recipe makes approximately six muffins. If you're looking to enjoy more, simply double the measurements and it should easily make twelve.
Bake these muffins for approx 20 to 25 minutes or until a toothpick inserted into the centre of the muffin comes out clean.
